Polish Noodles (Cottage Cheese and Noodles)

Taste comments: Tastes like deconstructed perogies. The husband actually liked it! He rarely likes what I cook because I make things too bland for him.


Ingredients:

1/2 cup butter 1 small onion, diced

1 (16oz) package noodles (any kind!) 1 (16oz) container cottage cheese 1/2 cup sour cream

Your favorite Mediterranean Basil Salt seasoning to taste!


Directions: 

  1. Place butter in a saucepan and heat over medium heat until melted. Add onion and cook until softened, about 7-10 minutes.

  2. Meanwhile, bring a large pot of lightly salted water to a boil (I used our Celtic salt!). Add noodles and cook, stirring occasionally, until partially cooked, about 5 minutes. Drain and return to pot.

  3. Pour onion mixture over noodles. Stir in cottage cheese, sour cream, and seasoning of choice (I used about a half teaspoon). Cook over medium heat, stirring occasionally, until sauce is heated through, and noodles are tender, yet firm to the bite, about 5-8 minutes.

  4. Serve and garnish if you would like (husband added parsley).


Pro-tips: 

  1. I used Mediterranean Basil Salt while cooking and then added Italian Black Truffle salt as a finishing salt and it was DIVINE.

  2. You can use any noodles with this recipe! The original recipe called for egg noodles, but I used a Fusilli pasta I had stuffed in the back of my cabinet.

  3. For step 3, I cooked until the pasta was a desired doneness AND the cottage cheese curds had pretty much melted.
