Healthy Chicken Salad

Ingredients:

1 6-ish oz container of fat free Greek yogurt

1/2 cup low-fat cottage cheese (I used full fat)

1/2 cup diced apples (I used Granny Smith)

1/2 cup chopped celery

1/4 cup sweetened dried cranberries (I omitted these)

2 tablespoons chopped onion (I used yellow)

2 tablespoons chopped pecans (I used sliced almonds because I didn't have pecans)

1/2 tablespoon Dijon mustard

1 1/4 cups of cubed chicken (I use left over fried chicken (with the skin off) from a local business)

Any of our seasonings to taste (I used Mediterranean Basil Salt when I initially made it and then used our Spicy Mediterranean when I ate it later)


Directions: 

  1. Combine all the Greek yogurt, cottage cheese, apples, onion, celery, Dijon mustard, pecans, and cranberries in a bowl until well combined.

    Everything (sans chicken and seasoning) ready for mixing!

  2. Mix in chicken. Season with your favorite Mediterranean Basil Salt seasoning.

    Chicken added and about to be sprinkled with the OG - Mediterranean Basil Salt (we keep ours in our own shaker!)

Pro-tips: 

  1. Make this the night before you need it. This allows all of the flavors to mingle.
