Easy Pasta with Sauce

This recipe appealed to me because we had some left-over tomatoes from one of our shows, and I hate wasting food. Additionally, I am trying my best to both eat healthier, eat more whole foods, and meal prep. This recipe checks all of those boxes!
There was no title for this recipe, and I never saw official amounts so I just completely eye-balled this one based off of what I could remember from the video! It seemed easy and clean, so I went with it!
Ingredients:
1-2 servings of whole grain pasta (I used linguini)
1-2 small containers of cherry tomatoes
3 bell peppers (I had three small bell peppers - one yellow, one orange, one red)
4 cloves of garlic
Cottage cheese (I used 4 heaping tablespoons (actual spoons; not measuring spoons) of 2% low curd)
1/4-ish cup pasta water
Shredded Parmesan cheese
Olive oil
Mediterranean Basil Salt
Directions:
Prepare pasta according to package instructions.
While pasta is cooking, pre-heat your oven to 400 degrees F. Then, halve your cherry tomatoes and slice your peppers. (NOTE: I was also going to throw in some onion, but my onion had died.) Toss them all in a bowl and coat them with olive oil and Mediterranean Basil Salt.
Spread your chosen prepared veggies onto a baking sheet and add a few gloves of garlic (I used 4).

Pop your veggies into the oven and roast for about 30 minutes - stirring them around every few minutes. When everything seems soft, take them out of the oven.
**Don't forget your pasta! When done, drain the pasta - but don't forget to reserve about 1/2 cup of the pasta water.
Put all of the veggies into a blender. Add pasta water (I think I ended up adding about 1/4 cup-ish) and cottage cheese. Blend it up until smooth!
Depending on your goal for this meal, you can either:
Keep everything separate (for future use (btw - this sauce can be frozen!)). OR
Mix the sauce with the pasta and throw some shredded parmesan cheese on top and enjoy right then and there!
Optional add-ins: chicken for some protein; veggies like zucchini. You could also throw the pasta and sauce back into the pan then add spinach and heat until the spinach softens.
