One half head of small green cabbage
Two large carrots
1 teaspoon Spicy Mediterranean Basil Salt
3 tablespoons shallots, chopped fine
1/4 cup mayo
Splash of rice vinegar
1/8 teaspoon black pepper
1/8-1/4 teaspoon chili powder
1/8 teaspoon celery seed
Sugar to taste, if desired
Shred half head of small green cabbage and two good sized carrots in box grater or food processor.
Sprinkle one teaspoon spicy Mediterranean basil salt onto the cabbage and carrot combination and mix well. Let macerate while you prepare the rest of the ingredients.
Mix all the remaining ingredients together, then mix into cabbage-carrot mixture. Let this marry for several hours or overnight.
